Hunan Stir-Fry (Printable Version)

Juicy chicken and fresh veggies cooked in a rich, sweet-savory sauce, all done in 25 minutes.

# Ingredients:

→ Stir Fry Ingredients

01 - 2 chicken breasts, thinly sliced, boneless and skinless
02 - 1 teaspoon black pepper
03 - 1 cup cornstarch
04 - 1 tablespoon oil (any type you prefer)
05 - 1 teaspoon salt
06 - 1 tablespoon oil for cooking
07 - 1 cup celery, cut into thin slices
08 - 1 can baby corn, halved and drained
09 - 1 red bell pepper, diced into bite-sized chunks
10 - 1 ½ cups broccoli florets, chopped smaller
11 - 2 tablespoons minced garlic
12 - 1 tablespoon ginger, grated or minced fresh

→ Hunan Sauce

13 - 1 tablespoon oyster sauce
14 - 1 cup chicken stock
15 - 2 tablespoons or 1/8 cup cornstarch
16 - 2 tablespoons regular soy sauce (either low sodium or standard)
17 - 1 tablespoon vinegar (use rice vinegar, apple cider vinegar, or white vinegar instead of rice wine vinegar)
18 - 2 teaspoons sambal olek chili garlic sauce or a bit of sriracha
19 - 2 tablespoons honey or granulated sugar

20 - Diced green onions
21 - A sprinkle of sesame seeds

# Steps:

01 - In a small mixing bowl, stir all the Hunan sauce ingredients together thoroughly. Set it aside for later use.
02 - Take a plastic bag or a bowl and mix together the cornstarch, salt, and pepper. Add the chicken pieces and coat them evenly. Shake the bag or toss the pieces in the bowl until everything's covered.
03 - Heat one tablespoon of oil in your pan or skillet over high heat. Toss in the chicken and cook until the edges turn brown. If your pan is small, cook in batches so you don’t overcrowd. Take the chicken out of the pan once it’s ready.
04 - Add another tablespoon of oil into the same pan. Stir in the minced garlic and grated ginger, cooking just for a few seconds until fragrant. Then toss in the vegetables and cook them for 2-3 minutes while stirring.
05 - Pour in the premixed sauce and let it simmer for about a minute or two until it thickens. Lower the heat, add the cooked chicken, and stir well to coat everything with the sauce.
06 - Serve it alongside noodles or rice. Sprinkle sesame seeds and diced green onions on top if you like. Dig in and enjoy!

01 - Keep the stir fry over really high heat so everything cooks fast without losing its texture.
02 - Chop and measure everything in advance to make cooking less stressful and quicker.
