Spicy Sweet Bowls (Printable Version)

# Ingredients:

→ Protein & Sauce

01 - 1/4 cup honey
02 - 2 tbsp olive oil
03 - 2 tbsp minced chipotle peppers in adobo sauce
04 - 2 diced chicken breasts

→ Bowl Components

05 - 1 avocado, peeled and diced
06 - 1 cup drained and rinsed black beans
07 - 1 red bell pepper, diced
08 - 1 cup corn, fresh or frozen
09 - 3 cups white, jasmine, or brown rice, cooked

→ Garnish

10 - Lime juice from one lime
11 - Salt and a sprinkle of pepper to season
12 - 1/4 cup chopped fresh cilantro

# Steps:

01 - Warm a tablespoon of oil in a large pan. Add seasoned chicken chunks and cook on medium heat until golden and cooked through, about 6 to 8 minutes. Take the chicken out when done.
02 - Pour the rest of the oil into the same pan. Stir in honey and minced chipotle peppers. Allow it to bubble for 2-3 minutes until it thickens.
03 - Toss the cooked chicken back into the pan, making sure the sauce coats every bite. Let it cook for another 2 minutes.
04 - Spoon rice into bowls. Pile on the chicken, bell pepper, beans, avocado, and corn. Sprinkle fresh cilantro over everything.
05 - Drizzle lime juice on top and enjoy your meal right away!
