Strawberry Shortcake Cheesecake (Printable Version)

# Ingredients:

→ For the Sponge Cake

01 - ¾ cup all-purpose flour
02 - 4 large eggs
03 - ¾ cup granulated sugar
04 - 1 teaspoon vanilla extract
05 - 1 teaspoon baking powder
06 - ¼ teaspoon salt
07 - ½ cup finely chopped strawberries
08 - ¼ cup whole milk

→ For the Cheesecake Filling

09 - 1 cup heavy whipping cream
10 - 8 oz cream cheese, softened
11 - ½ cup powdered sugar
12 - 1 teaspoon vanilla extract

→ For the Strawberry Shortcake Crumble

13 - 2 tablespoons melted butter
14 - 2 tablespoons strawberry gelatin powder
15 - 1 cup golden Oreos, crushed

→ For the Topping

16 - Drizzle of strawberry sauce
17 - Whipped cream
18 - Fresh strawberries, sliced

# Steps:

01 - Set your oven to 350°F (175°C) and get a 9x13-inch baking sheet ready by lining it with parchment. Whisk the sugar and eggs vigorously until thick and light. Stir in vanilla. Gently fold in the sifted salt, flour, and baking powder. Carefully add the strawberries and milk, mix, pour, and bake for 10–12 minutes.
02 - While still warm, roll the parchment-lined cake into a log and let it cool down fully.
03 - Whip the cream cheese, vanilla, and powdered sugar until it’s glossy and creamy. Whip the heavy cream in a separate bowl until it can hold its shape. Combine both gently by folding.
04 - Carefully open the cooled roll, spread the cheesecake filling evenly, and gently roll it back up. Wrap tightly in plastic and let it set in the fridge for at least a couple of hours.
05 - Combine the crushed Oreos, the strawberry gelatin, and the warm melted butter. Stir until chunky.
06 - Spread an extra layer of cheesecake filling all over the roll. Sprinkle the crumble generously on top. Pop on some whipped cream, strawberry slices, and a drizzle of strawberry sauce. Slice it up and dig in!
