Italian Lemon Drink (Printable Version)

Bursting with fresh lemon flavor, this sweet and strong homemade limoncello is ideal for cocktails or an after-dinner treat.

# Ingredients:

01 - 6 cups of plain water
02 - 8 lemons (organic), zest only
03 - 3 cups of regular white sugar
04 - 750 milliliters of Everclear (high-proof alcohol)

# Steps:

01 - Grab a potato peeler and remove just the bright yellow part of the lemon skin. Avoid the bitter white underneath.
02 - Put the lemon zest into a big glass jar or container. Pour in all the Everclear until the zest is completely covered.
03 - Close the container tight. Tuck it away in a dark, cool spot for 14 to 28 days. Give it a good shake daily to help blend the flavors.
04 - Once the waiting time is over, mix sugar and water in a big pot on medium heat. Stir nonstop until everything’s dissolved, then set aside to cool down.
05 - Get a fine strainer and remove the zest from the infused alcohol. Mix in the cooled syrup, stirring until it’s all blended.
06 - Pour your finished limoncello into bottles or containers. Keep it chilled in the fridge. It’ll last for months when stored cold.

01 - Choosing organic lemons means avoiding wax or chemicals on the peel.
02 - If Everclear isn’t available, you can swap it with vodka that’s 100-proof.
03 - Leaving the lemon peel to soak longer makes the flavor stronger and bolder.
04 - You can freeze limoncello, and it’ll stay good for up to 12 months.
05 - Serve this as-is after a meal or mix it into drinks like Lemon Drop Martinis or Limoncello Spritzers.
