Grab a potato peeler and remove just the bright yellow part of the lemon skin. Avoid the bitter white underneath.

Put the lemon zest into a big glass jar or container. Pour in all the Everclear until the zest is completely covered.

Close the container tight. Tuck it away in a dark, cool spot for 14 to 28 days. Give it a good shake daily to help blend the flavors.

Once the waiting time is over, mix sugar and water in a big pot on medium heat. Stir nonstop until everything’s dissolved, then set aside to cool down.

Get a fine strainer and remove the zest from the infused alcohol. Mix in the cooled syrup, stirring until it’s all blended.

Pour your finished limoncello into bottles or containers. Keep it chilled in the fridge. It’ll last for months when stored cold.
