Egg and Cheese Toast (Printable Version)

Thick toast with fried eggs and two cheeses, grilled till crispy and gooey. It's comforting and quick to make.

# Ingredients:

01 - 4 slices of thick, fluffy Texas toast
02 - 2 slices of pepper jack cheese
03 - 2 slices of Colby Jack cheese
04 - 4 large eggs
05 - Butter for cooking and spreading
06 - Salt and pepper, as needed

# Steps:

01 - Smear one side of each slice with butter, then put them aside on a plate.
02 - Melt some butter in a pan over low settings. Crack the eggs carefully into the pan, cooking them to the doneness you like best. Sprinkle with a little salt and pepper, remove from heat, and set aside for later.
03 - Put a piece of bread, butter-side facing the pan, in a clean skillet. Lay one slice of Colby Jack cheese on top.
04 - Layer two cooked eggs on the Colby Jack, then put a pepper jack slice on top of the eggs.
05 - Place another bread slice on top, keeping the buttered side facing up. Put a lid on top of the pan to gently melt the cheese.
06 - Cook one side until golden and crispy, and the cheese starts softening. Flip it carefully and let the other side cook until it's fully melted and golden too.
07 - Do the same steps for your second sandwich. Serve them while they're still hot with gooey cheese.

02 - Lidding the pan ensures the cheese melts evenly as the bread crisps.
03 - Make the eggs however you enjoy, but runny yolks give lovely, rich flavor.
