Grilled Cheese Egg Sausage (Printable Version)

A mouthwatering sandwich loaded with buttery sourdough, soft scrambled eggs, melted cheese, and savory sausage for a fantastic breakfast.

# Ingredients:

→ Breakfast Mixture

01 - 6 large eggs, whisked
02 - 4 tablespoons butter, divided and softened
03 - ½ pound breakfast sausage, crumbled

→ Assembly Ingredients

04 - 8 slices of Colby-Jack cheese
05 - 8 sourdough bread slices

# Steps:

01 - In a big skillet, cook up the crumbled sausage over medium heat until it's browned all the way. Scoop it onto a bowl lined with a paper towel to catch the grease, then clean up the pan.
02 - Melt 2 tablespoons of butter in the cleaned pan over medium-high heat. Pour in your whisked eggs, stirring gently as they start to cook. Stop cooking when the eggs are still slightly creamy and pull them off the heat.
03 - Take the paper towel out of the sausage bowl. Add the scrambled eggs to the bowl and mix gently. Clean the skillet one more time and heat it back up to medium.
04 - Spread the rest of the butter on one side of each bread slice. This'll give you that crispy, golden texture when cooking.
05 - In your heated skillet, place a buttered slice of bread (buttered side facing the pan). Add one slice of Colby-Jack cheese, then spoon on about ½ cup of the sausage-egg mixture.
06 - Add another cheese slice over the filling, then cap the sandwich with the second bread slice, butter facing up.
07 - Grill the sandwich for 3 to 4 minutes, long enough to turn golden on the first side. Flip gently, then cook the second side for the same time, until crispy and melted.
08 - Take the sandwich out, move it to a cutting board, and slice in half if you'd like. Keep going until you've got 4 sandwiches total. Serve while they're still warm and fresh!

01 - Sausage not your thing? Swap it for bacon, ham, or just go with plain eggs and cheese.
02 - For something different, try mayo instead of butter on the bread to toast it.
03 - Want a fresh twist? Add tomato slices and a sprinkle of salt and pepper.
