Berry Oat Squares (Printable Version)

# Ingredients:

→ Topping and Crust

01 - 2/3 cup packed dark brown sugar
02 - 1 cup finely ground almond flour
03 - 1/2 cup cold unsalted butter, cut into small cubes
04 - 1 1/2 cups rolled oats (gluten-free)

→ Filling

05 - 1/4 cup pure maple syrup
06 - 3 cups diced fresh strawberries
07 - 1 tablespoon arrowroot powder or cornstarch
08 - The zest and juice from one lemon
09 - 1 teaspoon pure vanilla extract

# Steps:

01 - Set your oven to 350°F and get an 8x8 pan lined with parchment paper.
02 - In a large bowl, mix brown sugar, oats, almond flour, and butter. Use your hands to blend the butter in until it feels like dough.
03 - Take two-thirds of the dough and press it into the lined pan. Bake for 15 minutes, then leave it aside to cool.
04 - In a medium pot, heat the strawberries, syrup, vanilla, and lemon zest on medium-high. Cook 10-12 minutes till thick and vibrant. Stir in a mix of lemon juice and cornstarch to thicken further.
05 - Spread the strawberry mix over the baked crust layer, sprinkle the remaining dough over the top, and bake for 25-30 minutes until everything is bubbling and golden. Cool fully before slicing.

# Notes:

01 - Slice better by letting it cool completely.
02 - Works well with both fresh or frozen strawberries.
03 - Store leftovers in the fridge for up to five days.
