In a bowl, mix Dijon mustard, whole grain mustard, honey, soy sauce, olive oil, garlic, and vinegar until smooth.

Sprinkle chicken with some salt and pepper. Place it in a dish and pour sauce over, covering evenly. Let it sit for half an hour.

Heat oven to 375°F. Bake for about 25–30 minutes. Make sure chicken hits 165°F inside. Spoon sauce over halfway through.

Use a skillet with oil to cook chicken, about 6–8 minutes each side. Toss the rest of the sauce in at the end to coat it.

Move chicken to your serving plate. Drizzle remaining sauce on top and sprinkle with parsley to finish.
