Roasted Sweet Carrots (Printable Version)

Tender roasted carrots glazed in a rich honey garlic butter sauce. A simple side that adds a delicious touch in half an hour.

# Ingredients:

01 - 5 tablespoons of butter
02 - Chopped parsley for topping
03 - 4 garlic cloves, finely chopped
04 - About 2 pounds of carrots, sliced diagonally into 2-3 inch pieces
05 - 1/4 teaspoon freshly ground black pepper
06 - 1/4 teaspoon salt, or adjust to your taste
07 - 2 tablespoons of honey

# Steps:

01 - Turn the oven on to 425°F and get a baking sheet ready by giving it a light coat of grease. Cut your carrots into even diagonal pieces, about 2-3 inches long.
02 - Warm up the butter in a tiny pot over medium heat. Toss in the garlic and let it cook for around 3 minutes, just until it smells great and turns golden. Take the pot off the heat, stir in the honey, and make sure it's blended well.
03 - Put your carrot slices in a big bowl. Pour the honey butter mix over them, sprinkle in some salt and pepper, and toss it all together so the carrots are evenly covered.
04 - Arrange the coated carrots on your prepared baking pan, spreading them out in one layer. Bake for 22-25 minutes, until they’re tender when poked with a fork and have browned edges.
05 - Take the roasted carrots out and taste test. Sprinkle on a little more salt and pepper if needed. Move them to a dish, add chopped parsley on top, and serve while warm.

# Notes:

01 - Try slicing carrots into even pieces so they bake at the same rate.
02 - Make this dish ahead of time and reheat it when you're ready to dig in.
03 - If you’ve got baby carrots, use those instead, but they’ll need less baking time, so keep an eye on them.
