Turn the oven on to 425°F and get a baking sheet ready by giving it a light coat of grease. Cut your carrots into even diagonal pieces, about 2-3 inches long.

Warm up the butter in a tiny pot over medium heat. Toss in the garlic and let it cook for around 3 minutes, just until it smells great and turns golden. Take the pot off the heat, stir in the honey, and make sure it's blended well.

Put your carrot slices in a big bowl. Pour the honey butter mix over them, sprinkle in some salt and pepper, and toss it all together so the carrots are evenly covered.

Arrange the coated carrots on your prepared baking pan, spreading them out in one layer. Bake for 22-25 minutes, until they’re tender when poked with a fork and have browned edges.

Take the roasted carrots out and taste test. Sprinkle on a little more salt and pepper if needed. Move them to a dish, add chopped parsley on top, and serve while warm.
