Corn with Garlic Butter and Cheese (Printable Version)

Warm corn brushed with a luxurious garlic and herb butter, then finished off with Parmesan. This quick and tasty dish takes corn from basic to unforgettable.

# Ingredients:

01 - 4 fresh ears of corn, husks removed
02 - 1/4 cup unsalted butter, at room temperature
03 - 2 minced garlic cloves
04 - 1 tablespoon freshly chopped parsley
05 - 1/2 teaspoon of salt
06 - 1/4 teaspoon ground black pepper
07 - 1/2 cup Parmesan cheese, finely grated
08 - Optional: 1 teaspoon of lemon zest

# Steps:

01 - Boil a big pot of water, toss in the corn, and let it cook for around 10 minutes until it's nice and tender. If grilling is your style, heat up the grill on medium-high and turn the ears every now and then—cook for about 10 minutes until they’re lightly charred. After cooking, drain the water (if boiled) and give the corn some time to cool enough so you can handle it.
02 - Get a small bowl and mix together the softened butter, minced garlic, parsley, salt, pepper, and lemon zest (if you're using it). Keep stirring until it's all blended nicely.
03 - When the corn feels warm but isn't too hot to the touch, grab a knife or pastry brush and generously slather the garlic butter mixture all over each ear of corn until it's completely coated.
04 - Spread the Parmesan cheese on a plate or in a shallow dish. Roll each buttery ear of corn in the cheese, pressing lightly so the cheese sticks well.
05 - Dig in while the corn is still warm! If you like, sprinkle a pinch of fresh parsley over the top for a fancy touch.

# Notes:

01 - Grilling adds a smoky flavor that's tough to beat.
02 - You can make the garlic butter ahead of time; just let it come to room temp before spreading.
03 - No fresh parsley? Swap in dried parsley (you only need 1 teaspoon) or even basil or chives.
04 - Want it spicy? Stir a bit of crushed red pepper flakes into the butter mixture.
