# Ingredients:

02 - Oil, to fry in

→ Coating Mix

03 - 1 white from a large egg
04 - 1/2 cup sifted plain flour
05 - 1/4 cup of corn flour
06 - 1/2 teaspoon of baking powder
07 - 1/2 cup of icy-cold water
08 - 1 tablespoon of cooking oil

# Steps:

01 - Slice the bananas into chunks roughly 1 inch (2.5 cm) long. Keep them aside for later use.
02 - Combine everything listed under 'Coating Mix' in a large mixing bowl. Stir the batter until it's smooth. Add the banana chunks gently to the batter, coating them evenly.
03 - Pour 2–3 inches (5–7 cm) of oil into a small pot and turn the heat to high. Check if it's ready by looking for a fine swirl of smoke above the surface.
04 - Place the battered banana pieces carefully into the hot oil. Fry them in smaller batches, flipping each piece so they cook to a crispy, golden-brown finish on both sides.
05 - Take out the crispy banana pieces using a slotted spoon and lay them on a paper towel-lined plate to soak up any extra oil. Continue frying the rest. Serve hot with powdered sugar, chocolate sauce, or maple syrup.

# Notes:

01 - Swap in 2 tablespoons of rice flour for added crunch
02 - Pair with honey, caramel sauce, or a scoop of ice cream
03 - These taste the best fresh, while still hot
