Set your oven to 400°F (200°C) to preheat. Mix together the ham, Gruyère, spinach, and green onion in a bowl. In a second bowl, whisk eggs, cream, milk, garlic powder, pepper, salt, and nutmeg until smooth.

Roll out the puff pastry sheets on a floured surface into rectangles about 14 by 12 inches. Slice each into 12 even squares.

Grease the wells of a muffin tin lightly. Push a pastry square into each one, shaping it to fit snugly.

Spoon a tablespoon of the ham mixture into each pastry base. Pour the egg mix over it, filling the cups up to about two-thirds full.

Pop the tray into your oven and bake for 17–20 minutes. Look for golden brown pastry and set egg filling. You can check if it’s cooked by inserting a toothpick—it should come out clean.

Take the tray out and let everything cool down for around 5–10 minutes before serving. Serve warm and dig in!
