Disneyland Beef Birria Sandwich (Printable Version)

Tender beef, melted pepper jack cheese, salsa verde, and cilantro come together on buttery sourdough slices in this grilled masterpiece.

# Ingredients:

→ Beef Mixture

01 - 4 pounds of top round beef, divided into 3 chunks
02 - 1 large can (28 ounces) of enchilada sauce
03 - 1½ teaspoons of oregano, dried
04 - 1 teaspoon of cumin powder
05 - 1 teaspoon of ground ginger spice
06 - 3 cups of beef broth, separated
07 - ¼ cup of apple cider vinegar
08 - 1 big onion, quartered
09 - 4 garlic cloves, roughly crushed
10 - 2 bay leaves
11 - ½ tablespoon of salt
12 - ½ tablespoon of ground black pepper

→ Cheese Sandwich Parts

13 - Softened butter
14 - 20 pieces of sourdough bread
15 - 30 pepper jack cheese slices
16 - 1 jar (16 ounces) of salsa verde (about 1 spoon per sandwich)
17 - A bunch of fresh cilantro, finely chopped (around 1 small spoon per sandwich)

# Steps:

01 - Set your oven to 350°F. Slice the beef into 3 huge chunks. Mix together the enchilada sauce, oregano, cumin, ginger, 1 cup of broth, vinegar, onion, garlic, bay leaves, salt, and pepper in a big Dutch oven.
02 - Drop the beef into the sauce until covered. Put a lid on and cook in the oven for 3½ hours until it falls apart easily.
03 - Pull the beef apart with forks, then stir it back into the Dutch oven. Mix in the leftover 2 cups of broth.
04 - Spread butter on one side of a couple of bread slices. Heat a skillet or a griddle on medium.
05 - Lay both bread pieces buttered side facing down on the warmed skillet. Top each slice with one and a half slices of the cheese.
06 - Using tongs, pile shredded beef on the melted cheese. Top the beef with some salsa verde and chopped cilantro. Layer the other buttered slice on top. Keep flipping and grilling till the bread is golden and crispy. Repeat for the rest.
