Fried S'mores (Printable Version)

Crispy shells filled with gooey chocolate and marshmallows.

# Ingredients:

→ S'mores

01 - 2 cups of mini marshmallows
02 - 2 cups of chocolate chips or 8 oz baking chocolate, split in half
03 - 9 sheets of graham crackers

→ Batter

04 - 6 tablespoons white sugar
05 - 2 large eggs
06 - 1 1/2 cups whole milk
07 - 2 1/4 cups plain flour
08 - 1 teaspoon baking powder
09 - 1/4 teaspoon salt
10 - 2 teaspoons cooking oil

→ Frying & Serving

11 - vegetable oil (1 quart, for frying)
12 - optional powdered sugar for topping

# Steps:

01 - Take an 8x8-inch pan and line it with parchment paper. Cover the bottom with graham crackers, breaking them up to fit evenly. Microwave 1 cup of chocolate chips in short bursts of 30 seconds, stirring each time, until melted into a smooth consistency.
02 - Spread a third of the melted chocolate over the graham cracker base. Add the rest of the chocolate chips, another layer of the melted chocolate, and scatter on the marshmallows. Use the remaining melted chocolate to drizzle on top, then cover everything with another layer of graham crackers. Chill the pan in the fridge for 10 minutes.
03 - In one bowl, combine eggs, oil, and milk using a whisk until blended. In another bowl, dump in the flour, sugar, baking powder, and salt, then mix well. Pour the wet mix into the dry ingredients and stir until smooth.
04 - Pour vegetable oil into a saucepan or fryer and heat it to 425°F.
05 - Take the cold s'mores out of the fridge. Lift it out of the pan using the parchment paper and place it on a flat work surface. Slice into 36 pieces by cutting a 6x6 grid. If any pieces break, patch them with some melted chocolate.
06 - Coat each piece of s’mores evenly in the batter. Let any extra batter drip off before frying. Carefully lower them into the hot oil and cook for about 1 minute until they puff up and turn golden. Move to a plate with paper towels to drain.
07 - Repeat the coating and frying steps for the rest of the s’mores. Sprinkle powdered sugar on top if you like. Serve while warm and dig in!

# Notes:

01 - You can save time by using a box of dry pancake mix—just follow the directions on the box for the batter.
02 - On hot days, keep your s'mores chilled until you're ready to fry them to help them hold their shape.
