Southern Banana Delight (Printable Version)

Crisp vanilla wafers, ripe bananas, and smooth vanilla pudding come together in this comforting Southern dessert you can't resist.

# Ingredients:

→ Pudding

01 - 1/4 teaspoon salt
02 - 3 eggs
03 - 3 cups milk
04 - 2 teaspoon vanilla extract
05 - 3/4 cup sugar
06 - 1/4 cup flour

→ Layers

07 - 4 bananas, sliced
08 - 1 box (8 oz) vanilla wafers

# Steps:

01 - Grab a saucepan and mix together the salt, sugar, and flour. Slowly whisk in the milk, and heat on medium until it thickens and starts bubbling. Turn the heat down and keep cooking for another 2 minutes.
02 - Beat eggs in a small bowl. Gradually mix hot pudding into the eggs, a little at a time, then pour everything back into the saucepan. Heat gently until it boils softly for 2 minutes.
03 - Stir in the vanilla, then take the pot off the stove. Let it sit for about 15 minutes, stirring every now and then so it doesn't firm up too much.
04 - In an 8-inch square dish, put down 25 vanilla wafers, then add half of the banana slices and half of the pudding. Do another layer like this and finish with the last bit of pudding on top.
05 - Wrap the dish with plastic wrap and stick it in the fridge for a minimum of 4 hours or even overnight. Crush a few wafers and sprinkle them on top before serving.

# Notes:

01 - Tastes better when left in the fridge overnight
02 - Serve it chilled
03 - Wait to add crushed wafers until just before eating
