Mix shrimp with oregano, Cajun seasoning, pepper, and salt in a bowl. Warm 1 tbsp olive oil in a big pan over medium heat. Cook the shrimp for 2–3 minutes on each side until they’re pink and just begin to brown. Remove them from the pan and set aside.

Using the same pan, add the second tbsp of olive oil and cook the sausage slices until both sides get a nice brown color. Take them out and set them aside.

Toss garlic, sliced onion, and bell pepper into the pan. Stir them around and let cook for about 5 minutes until everything softens and smells great.

Pour in the chicken broth and crushed tomatoes. Let it gently bubble. Add Parmesan and cream, stirring to make a rich, smooth texture. Taste it and adjust with more Cajun spice, pepper, or salt if it needs it.

As the sauce simmers, boil your pasta in salted water following the package's timing. Drain it and toss it into the sauce when ready.

Put the cooked shrimp and sausage back into the pan with the saucy pasta. Mix everything thoroughly so it’s all coated and warmed up.

Top with some fresh parsley or extra Parmesan before serving, if you’d like.
