01 - 1 lb (450g) ground beef
02 - 12 oz (340g) medium pasta shells
03 - 1 small onion, diced
04 - 2 garlic cloves, minced
05 - 1 can (14.5 oz) diced tomatoes with juice
06 - 1/2 cup (120ml) beef broth
07 - 1 can (10.5 oz) condensed cream of mushroom soup
08 - 2 cups (200g) shredded cheddar cheese
09 - 1/2 cup (120g) sour cream
10 - 1 cup (100g) shredded mozzarella cheese
11 - 1/2 tsp paprika
12 - 1 tsp Italian seasoning
13 - 1/2 tsp salt
14 - 1/4 tsp black pepper
15 - 2 tbsp freshly chopped parsley for finishing

# Steps:

01 - Turn on your oven to 375°F (190°C) and grease up a 9×13-inch dish lightly.
02 - Follow the package directions to cook the pasta until it's al dente. Drain it and set it aside.
03 - In a big skillet over medium-high heat, cook the beef with the onion until the meat's browned, which takes about 5-7 minutes. Toss in the garlic and keep cooking for another minute or two. Get rid of any grease.
04 - Add the diced tomatoes (juice included), the mushroom soup, beef broth, sour cream, paprika, Italian seasoning, salt, and pepper into the pan. Let it all simmer together for 5-7 minutes to bring the flavors together.
05 - Stir the cooked pasta shells into the beef and sauce, making sure everything’s evenly mixed.
06 - Dump the pasta-beef mix into the greased casserole dish. Scatter the cheddar and mozzarella cheeses across the top.
07 - Bake for 20-25 minutes until the cheese gets all melty and bubbly.
08 - Sprinkle parsley on top and enjoy while it’s hot.

# Notes:

01 - Spice it up: Toss in 1/2 tsp red pepper flakes if you like heat.
02 - Add some veggies: Mix in cooked corn, peas, or sautéed mushrooms for extra goodness.
03 - Creamier sauce: Stir in 1/4 cup cream cheese to make it richer.
