Avocado Cheese Sandwich (Printable Version)

Cheesy and creamy! This avocado sandwich with melty cheese is an easy way to elevate your grilled cheese game in no time.

# Ingredients:

01 - A cup of sharp cheddar cheese, shredded fresh
02 - One perfectly soft avocado
03 - A cup of mozzarella, shredded fresh
04 - Four slices of thick bread, any kind you like

→ Flavor Enhancers

05 - A couple of tablespoons of softened butter
06 - Half a teaspoon of garlic powder
07 - A tablespoon of mayo—creamy is best
08 - If you've got it, a quarter cup of fresh basil
09 - Some sea salt and freshly cracked black pepper
10 - Half a teaspoon of onion powder

# Steps:

01 - Put a big skillet or griddle on medium heat. You want it nicely warm, but not hot enough to smoke.
02 - Scoop out the avocado and mash it with a fork. Keep it chunky or smooth—your call. Sprinkle in some salt and pepper for flavor.
03 - In a bowl, toss the two shredded cheeses together until it's all mixed evenly. This way, it'll melt smoothly.
04 - Take your bread and butter just one side of each slice. On the other side of two slices, spread a little mayo.
05 - Put the mayo-side of the bread face down onto your hot pan. Spread the mashed avocado over each bread slice, then sprinkle the tops with onion powder and garlic powder.
06 - Add a thick layer of your cheese mixture on top of the avocado. If you'd like, toss some basil leaves on top of the cheese.
07 - Place the rest of the bread slices on top with the buttered side facing upward. Cook this for about 3–4 minutes, until it’s golden and crispy underneath.
08 - Carefully turn the sandwiches over, one at a time, and cook another 3–4 minutes until the cheese melts and both sides are golden.
09 - Take the sandwiches off the heat. Let them cool just a bit, slice across diagonally, and dig in while the cheese is still gooey.

01 - Go with day-old bread if you don’t want it soggy from the avocado.
02 - Test the avocado first—it should be soft and just right, not too squishy.
03 - Stick to medium heat so the bread crisps up evenly while the cheese melts.
