Put a big skillet or griddle on medium heat. You want it nicely warm, but not hot enough to smoke.

Scoop out the avocado and mash it with a fork. Keep it chunky or smooth—your call. Sprinkle in some salt and pepper for flavor.

In a bowl, toss the two shredded cheeses together until it's all mixed evenly. This way, it'll melt smoothly.

Take your bread and butter just one side of each slice. On the other side of two slices, spread a little mayo.

Put the mayo-side of the bread face down onto your hot pan. Spread the mashed avocado over each bread slice, then sprinkle the tops with onion powder and garlic powder.

Add a thick layer of your cheese mixture on top of the avocado. If you'd like, toss some basil leaves on top of the cheese.

Place the rest of the bread slices on top with the buttered side facing upward. Cook this for about 3–4 minutes, until it’s golden and crispy underneath.

Carefully turn the sandwiches over, one at a time, and cook another 3–4 minutes until the cheese melts and both sides are golden.

Take the sandwiches off the heat. Let them cool just a bit, slice across diagonally, and dig in while the cheese is still gooey.
