Toss the cottage cheese, vanilla, and honey into a blender. Whip it all together until it's smooth, stopping occasionally to scrape down the sides if it's not blending well.

Cover a baking sheet with a piece of parchment paper. Pour the blended cottage cheese mixture onto it, then spread it out thinly and evenly.
