Protein-Packed Frozen Snack (Printable Version)

Smooth cottage cheese mixed with vanilla and honey, swirled with fruity blueberry jam, sprinkled with granola and fresh blueberries. Frozen into bite-sized, icy treats.

# Ingredients:

→ Toppings and Base

01 - 4-6 oz fresh blueberries
02 - 1 1/2 cups cottage cheese
03 - 1/4 cup granola
04 - 1/3 cup blueberry jam (unsweetened or naturally sweetened, if needed)
05 - 1 tbsp raw honey
06 - 1 tsp pure vanilla extract

# Steps:

01 - Toss the cottage cheese, vanilla, and honey into a blender. Whip it all together until it's smooth, stopping occasionally to scrape down the sides if it's not blending well.
02 - Cover a baking sheet with a piece of parchment paper. Pour the blended cottage cheese mixture onto it, then spread it out thinly and evenly.
03 - Spoon tiny bits of blueberry jam around the surface of the spread mixture. Use a spatula or knife to swirl the jam into the base, creating a marbled pattern.
04 - Scatter the fresh blueberries and granola across the surface. Press these lightly into the mixture so everything stays put.
05 - Stick the tray in the freezer and leave it there for at least 4 hours, or even overnight, until the whole thing is completely solid.
06 - Once fully frozen, break the bark into pieces that are easy to handle. Keep them in a sealed container in the freezer, and when ready to eat, let sit out for 5 minutes for the best taste and texture.

# Notes:

01 - Pick full-fat cottage cheese for a richer, creamier bark.
02 - Make sure to blend the cottage cheese mixture until it's extra smooth. Stop and scrape the blender as needed.
03 - Before spreading, taste-test the blended mixture. Love it sweeter? Stir in more honey at this stage.
04 - Pop leftover bark into an airtight container, and it'll stay fresh in your freezer for up to 14 days.
05 - Leave frozen bark out to soften for about 5 minutes before digging in.
