Coffee Donuts (Printable Version)

Light and tender donuts packed with cinnamon flavor and topped with a crumbly layer. These treats go perfectly with coffee for breakfast or a snack.

# Ingredients:

→ Crumb Layer

01 - 1/4 teaspoon ground cinnamon
02 - 3 1/2 tablespoons plain flour
03 - 1/4 cup white sugar
04 - 1/4 cup chilled butter, chopped into chunks

→ Donuts

05 - 1/2 teaspoon table salt
06 - 1 large room-temperature egg
07 - 1 teaspoon baking powder
08 - 1/2 cup soft brown sugar, packed
09 - 1/2 cup sour cream
10 - 2 1/2 tablespoons melted butter
11 - 1 cup plain flour

# Steps:

01 - Turn your oven on to 350°F and grease a donut pan with non-stick spray. Leave it to sit for now.
02 - Stir the sugar, cinnamon, and flour together in a small dish. Toss in the butter pieces and rub everything together quickly until you have a crumbly mix. Pop this in the freezer while you work on the batter.
03 - In one bowl, combine all the dry stuff. Grab a second bowl for the wet ingredients and whisk them together. Pour the wet mix into the dry one and fold gently—don’t stir too much.
04 - Using a piping bag (or a spoon if you prefer), put the batter into the donut tray. Sprinkle a good layer of the cold crumb mixture on top of each one.
05 - Bake them for 10 to 11 minutes or until they feel springy when pressed lightly.
06 - Leave the donuts in the pan for about 10 minutes, then carefully take them out. Transfer to a rack and let them cool a bit more.

# Notes:

01 - Tastes best warm with coffee
02 - You can use Greek yogurt instead of sour cream
03 - Store in an airtight box for up to 2 days
04 - Freeze them for up to 2 months
