Caesar Croutons Dish (Printable Version)

Golden croutons with crunchy lettuce and zingy dressing make this Caesar unbeatable.

# Ingredients:

→ Making the Croutons

01 - Half a French baguette, sliced thinly (about 1/4" thick)
02 - 3 tablespoons of good quality olive oil
03 - 2 small garlic cloves, finely chopped (1 tsp)
04 - 2 tablespoons parmesan cheese, grated

→ Homemade Caesar Dressing

05 - 1 teaspoon of minced garlic (2 cloves)
06 - 2 teaspoons Dijon mustard
07 - A splash (1 tsp) of Worcestershire sauce
08 - 2 teaspoons lemon juice, freshly squeezed
09 - 1 1/2 teaspoons of red wine vinegar
10 - 1/3 cup of extra virgin olive oil
11 - A pinch (1/2 tsp) of sea salt, or add more if you like
12 - A little black pepper (1/8 tsp), plus more for serving

→ Building the Salad

13 - 1 big head of romaine lettuce or 2 small ones
14 - Shaved or shredded parmesan cheese, about 1/3 cup

# Steps:

01 - Heat your oven to 350˚F. Slice the baguette lengthwise, then cut into thin diagonal pieces, about 1/4" thick. Toss the bread slices onto a baking tray. Mix up the olive oil and minced garlic in a small bowl. Pour the mixture over the bread, add the grated parmesan, and toss until all pieces are coated. Lay everything out flat in one layer and bake for around 10-12 minutes until golden and crisp.
02 - Put garlic, Dijon mustard, Worcestershire sauce, lemon juice, and red wine vinegar in a little bowl. Whisk it all together while slowly pouring in the olive oil. Add a bit of salt and pepper, tasting to get the seasoning just right.
03 - Wash and dry your romaine leaves, then tear or chop them up into bites. Place in a big salad bowl along with the parmesan cheese and croutons (when they've cooled). Pour the dressing over everything and toss gently, making sure it's all evenly dressed.

01 - The croutons make enough for 8 servings or two full salads. You can adjust the quantities to suit your needs.
