Toss coriander, garlic, ginger, chilies, lemon juice, salt, masala, bread, and ice cubes into a food processor. Add small amounts of water until smooth.

Add butter to one face of the bread. Flip and cover the opposite side with chutney.

Put a cheese slice on the chutney-coated bread, then add shredded mozzarella right over it.

Spread a thin chutney layer on one side of the second bread piece and lay it gently, chutney-side down, over the cheese.

Generously coat the top slice of bread with butter.

Warm a pan on medium-low. Add the sandwich carefully and toast one side until golden and crispy. Flip to toast the other side the same way.
