Grilled Cheese with Chutney (Printable Version)

Toasted cheese sandwich packed with bold green chutney flavors. Super simple and done in 20 minutes.

# Ingredients:

→ Chutney ingredients

01 - 2 large green chilies, chopped
02 - 1-inch piece ginger, sliced fresh
03 - 6 cloves of garlic
04 - 2 cups coriander leaves, washed
05 - Pinch of salt, to your liking
06 - 1 tbsp juice from a lemon
07 - 1 thin bread slice
08 - 2 small ice cubes
09 - 1/2 tsp chaat masala
10 - Adjust water to blend into paste

→ Sandwich ingredients

11 - 4 bread slices
12 - Shredded mozzarella cheese
13 - Butter to smear
14 - 2 slices of cheese, any type
15 - Finished green chutney

# Steps:

01 - Toss coriander, garlic, ginger, chilies, lemon juice, salt, masala, bread, and ice cubes into a food processor. Add small amounts of water until smooth.
02 - Add butter to one face of the bread. Flip and cover the opposite side with chutney.
03 - Put a cheese slice on the chutney-coated bread, then add shredded mozzarella right over it.
04 - Spread a thin chutney layer on one side of the second bread piece and lay it gently, chutney-side down, over the cheese.
05 - Generously coat the top slice of bread with butter.
06 - Warm a pan on medium-low. Add the sandwich carefully and toast one side until golden and crispy. Flip to toast the other side the same way.

# Notes:

01 - Throwing in a couple of ice cubes keeps chutney color vibrant and green while blending.
02 - Old bread works better—less chance of the sandwich getting soggy.
03 - Keep your heat medium-low to give the cheese time to melt without burning the bread.
