Gloria Chicken Bake (Printable Version)

Juicy chicken baked with mushrooms and sherry cream, finished with melty Muenster cheese for peak comfort.

# Ingredients:

→ Chicken & Crispy Coating

01 - Four chicken breasts without skin or bones, about 8 oz each
02 - 1 teaspoon of salt, preferably kosher
03 - A cup of plain flour
04 - 1/2 teaspoon finely ground white pepper

→ Butter & Oils

05 - Half a cup (8 tbsp) of butter
06 - 1/4 cup (4 tbsp) of high-quality olive oil

→ Veggies & Flavoring

07 - One medium onion, sliced into thin strips
08 - 1 pound of cremini mushrooms, thinly sliced
09 - 1 tablespoon of fresh minced garlic

→ Creamy Sauce

10 - 1 cup of chicken broth or stock
11 - 3 tablespoons of all-purpose flour
12 - 1.5 cups of heavy whipping cream
13 - 1/4 cup dry sherry wine
14 - 8 oz Muenster cheese slices

# Steps:

01 - Cut each chicken breast horizontally to make two thinner pieces, resulting in eight portions. Coat each piece twice in the flour seasoning mix.
02 - Cook in stages. Fry chicken in a mix of hot butter and oil until it's golden on the outside. Move cooked chicken into a 13x9 baking dish.
03 - Using a clean mix of butter and oil, cook mushrooms until golden. Add them on top of the chicken. Next, cook garlic and onions in leftover fats.
04 - Deglaze the pan with sherry, letting the alcohol cook off. Stir in flour before gradually adding broth, followed by cream. Let this turn into a smooth sauce, then pour it over the chicken and veggies.
05 - Lay slices of Muenster over the dish, then cover tightly with parchment and foil. Bake at 375°F for 20 minutes and briefly broil to brown the cheese.
