Chewy Brownie Cookies (Printable Version)

Soft chocolatey cookies with a gooey brownie interior. A delicious mashup of two favorites.

# Ingredients:

→ Dry Ingredients

01 - 1 teaspoon baking powder
02 - 95g (3/4 cup) plain flour
03 - 2 tablespoons cocoa powder
04 - 1/4 teaspoon salt

→ Wet Ingredients

05 - 100g (3/4 cup) caster sugar
06 - 2 eggs, room temperature
07 - 90g (1/2 cup) demerara sugar
08 - 225g (1 1/4 cups) dark chocolate, chopped
09 - 1 teaspoon vanilla
10 - 56g (1/4 cup) butter

→ Add-ins

11 - 85g (1/2 cup) dark or milk chocolate chips

# Steps:

01 - Set your oven to 160°C (320°F) for fan or 170°C (338°F) for standard. Cover a baking tray with parchment paper.
02 - Gently melt the butter with your chocolate over a pot of simmering water. Stir in the vanilla when melted.
03 - Use an electric mixer to whisk the eggs and both sugars until they turn pale and airy.
04 - Combine the flour, cocoa powder, baking powder, salt, and chocolate chips by sifting them together.
05 - Carefully mix your egg and melted chocolate mixtures, then gently stir in the dry ingredients. Stop when just blended.
06 - Scoop onto the lined tray, then bake for 12-14 minutes. The cookies should look set with a crackly surface.

01 - Keep a close eye on your chocolate while melting.
02 - Room temp eggs give the fluffiest results.
03 - Cool cookies completely on the tray before removing.
