Boil the ramen according to the instructions on the package. Once cooked, pour out most of the liquid but save 2-3 spoonfuls in the same pot with the noodles.

As the noodles cook, mix gochujang, soy sauce, sesame oil, sugar, and the 2 tablespoons of water in a small bowl. Stir it well until it’s smooth and blended.

Toss the cooked noodles back into the pot and coat them with the sauce mix. Add the ramen seasoning packet too if you want. Stir it over low heat for a minute so the noodles soak up the sauce.

Turn off the heat, scatter shredded mozzarella on top, and put the lid on. Wait for 1-2 minutes to melt the cheese until gooey and stretchy.

Spoon the spicy cheesy noodles into a bowl, and toss on any toppings you’re into—green onions, a fried egg, seaweed, or sesame seeds. Dig in while it’s steamy!
