# Ingredients:

01 - 1/4 cup mozzarella, shredded
02 - 1 teaspoon sesame oil
03 - 1 tablespoon soy sauce
04 - 2 tablespoons water (sauce liquid)
05 - 1 pack extra spicy ramen (e.g., Samyang Buldak)
06 - 1 tablespoon brown sugar
07 - 1/2 tablespoon Korean chili paste (gochujang)

08 - Green onion, finely sliced
09 - Seaweed flakes (optional)
10 - Boiled or fried egg, your choice
11 - Toasted sesame seeds (optional)

# Steps:

01 - Boil the ramen according to the instructions on the package. Once cooked, pour out most of the liquid but save 2-3 spoonfuls in the same pot with the noodles.
02 - As the noodles cook, mix gochujang, soy sauce, sesame oil, sugar, and the 2 tablespoons of water in a small bowl. Stir it well until it’s smooth and blended.
03 - Toss the cooked noodles back into the pot and coat them with the sauce mix. Add the ramen seasoning packet too if you want. Stir it over low heat for a minute so the noodles soak up the sauce.
04 - Turn off the heat, scatter shredded mozzarella on top, and put the lid on. Wait for 1-2 minutes to melt the cheese until gooey and stretchy.
05 - Spoon the spicy cheesy noodles into a bowl, and toss on any toppings you’re into—green onions, a fried egg, seaweed, or sesame seeds. Dig in while it’s steamy!

# Notes:

01 - If you're not a fan of a lot of heat, cut back on the chili paste or skip the ramen spice packet.
02 - Want it heartier? Add cooked chicken, tofu blocks, or thin slices of beef.
