Heat a large frying pan over medium. Toss in the ground beef and cook until it's fully browned, making sure to drain off the extra grease. Put it aside after cooking.

Bring a pot of water to a rolling boil and cook the pasta shells based on the directions on the package. Drain the water out completely and keep it nearby.

Using the same pan from the beef, toss in the Velveeta cheese chunk by chunk with the milk. Stir often on medium heat until the cheese is silky smooth and fully melted.

Throw the cooked pasta and browned beef into your cheesy sauce. Mix them together so everything's nicely coated.

Pour the Rotel and taco seasoning into the cheesy beef mixture. Give it a couple of good stirs to spread the flavors evenly.

Sprinkle the shredded cheddar over the pasta mix. Stir it in until the cheddar melts completely and blends into everything.
