Set your oven to 375°F (190°C) and line a big baking pan with parchment paper.

Combine the softened cream cheese, vanilla, granulated sugar, and cinnamon in a bowl until creamy, then gently mix in the diced apples.

Separate the dough into triangle sections and lay them out on the lined baking pan. Place the wide ends overlapping in the middle to form a circle, leaving the tips pointing outward.

Scoop the apple mixture onto the wide parts of the dough where they overlap, spreading it out evenly.

Pull the tips of the dough triangles over the filling and tuck them under the wide part in the center, shaping a ring. A bit of the filling will show.

Use a pastry brush to coat the top with melted butter, then sprinkle the coarse sugar evenly for a sweet hint of crunch.
