Set your oven to 375°F (190°C) and grease a 9x13-inch dish lightly.

Stir together rice, broccoli, 1.5 cups cheddar, milk, soup, seasonings, and optional chicken in a big bowl.

Spread the mixture into the greased dish and sprinkle the last 1/2 cup of cheese on top.

Blend the melted butter with breadcrumbs or crushed crackers and scatter this over the casserole.

Bake without a cover for 25–30 minutes until it's bubbly and the top is golden. Let it sit for 5 minutes before eating.
