Warm the oil in a medium pan over medium heat. Toss in the chopped onion and cook for around 5 minutes, stirring occasionally, until they soften and turn see-through.

Pour the whisked eggs into the same pan where the onions are. Slowly drag the eggs around with a spatula while they cook. Keep doing this until they’re set and no liquid remains. Stir in pepper and salt, then let them cool a bit.

Pop the biscuits out of the can and place them on your work surface. Roll each one down to a thinner circle, around ⅛ of an inch thick.

Scoop the cooked eggs and lay them on one side of each flattened biscuit. Sprinkle on some bacon bits and about ¼ cup of cheese for each piece. Leave space along the edges.

Dab the outer edge of the dough with a bit of water. Fold it like a taco and pinch the edges with a fork to keep everything inside.

Spray the air fryer basket lightly. Put in a few hand pies at a time, making sure there’s room for air to move around them. Spray the tops too, and cook at 360°F for 5 minutes.

Carefully turn each hand pie over with tongs. Continue air frying for another 4 minutes, or until they’re crunchy and golden on both sides.

In a small dish, stir melted butter, parsley, and onion powder together while the pies are finishing.

Once the pies are ready, brush them with the buttery seasoning mix. Pop them back into the air fryer for just 1 more minute to lock in the flavor.

Pull the hand pies out and dig in while they’re hot and crispy. Enjoy with sauces like ketchup, salsa, or hot sauce for dipping.
