Hand Pies for Breakfast (Printable Version)

Stuffed biscuit dough with eggs, bacon, and cheese. Air-fried till crisp and brushed with a tasty herby butter.

# Ingredients:

01 - 2 cups shredded sharp cheddar cheese, divided
02 - 6 slices of cooked bacon, crumbled
03 - 1 small yellow onion, chopped (roughly 1 cup)
04 - 1 teaspoon ground black pepper
05 - 1 tablespoon vegetable oil
06 - 6 large eggs, whisked
07 - 1 teaspoon salt

→ Pastry Base

08 - Non-stick cooking spray
09 - 1 can (8 count) of Pillsbury Grand biscuits

→ Seasoned Butter Topping

10 - 1 teaspoon freshly chopped parsley
11 - ¼ cup melted butter
12 - ½ teaspoon onion powder

# Steps:

01 - Warm the oil in a medium pan over medium heat. Toss in the chopped onion and cook for around 5 minutes, stirring occasionally, until they soften and turn see-through.
02 - Pour the whisked eggs into the same pan where the onions are. Slowly drag the eggs around with a spatula while they cook. Keep doing this until they’re set and no liquid remains. Stir in pepper and salt, then let them cool a bit.
03 - Pop the biscuits out of the can and place them on your work surface. Roll each one down to a thinner circle, around ⅛ of an inch thick.
04 - Scoop the cooked eggs and lay them on one side of each flattened biscuit. Sprinkle on some bacon bits and about ¼ cup of cheese for each piece. Leave space along the edges.
05 - Dab the outer edge of the dough with a bit of water. Fold it like a taco and pinch the edges with a fork to keep everything inside.
06 - Spray the air fryer basket lightly. Put in a few hand pies at a time, making sure there’s room for air to move around them. Spray the tops too, and cook at 360°F for 5 minutes.
07 - Carefully turn each hand pie over with tongs. Continue air frying for another 4 minutes, or until they’re crunchy and golden on both sides.
08 - In a small dish, stir melted butter, parsley, and onion powder together while the pies are finishing.
09 - Once the pies are ready, brush them with the buttery seasoning mix. Pop them back into the air fryer for just 1 more minute to lock in the flavor.
10 - Pull the hand pies out and dig in while they’re hot and crispy. Enjoy with sauces like ketchup, salsa, or hot sauce for dipping.

01 - Prepare your bacon in advance and crumble it once it’s cool.
02 - Don’t add hot eggs to the biscuit dough—it’ll make them hard to work with.
03 - If your air fryer’s small, cook the pies in smaller batches and don’t stack them.
04 - The butter mix gives them both amazing flavor and a glossy, browned finish.
