Banana Blueberry Oatmeal Bites (Printable Version)

Soft baked oatmeal bites full of blueberries and bananas. A lifesaver for hectic mornings or prepping ahead.

# Ingredients:

01 - 3 cups of rolled oats (old-fashioned)
02 - 1 teaspoon of cinnamon
03 - 2 teaspoons of baking powder
04 - 1/2 cup of honey or maple syrup
05 - 1 egg
06 - 1/2 teaspoon of salt
07 - 2/3 cup almond milk or any milk you like
08 - 1 teaspoon of vanilla
09 - About 1 cup of mashed bananas (roughly 2-3 bananas)
10 - 1 and 1/2 cups of blueberries (any type, fresh or straight from the freezer)

# Steps:

01 - Turn your oven to 350°F and let it heat up. Rub some grease on your muffin tin or pop some paper liners in.
02 - Mash up your bananas in a big bowl. Mix them with the egg, milk, vanilla, and honey. Stir it all together until smooth.
03 - Dump in the oats, baking powder, salt, and cinnamon. Give everything a good stir so it's blended well.
04 - Gently toss the blueberries into the mix, folding just until they’re spread out.
05 - Spoon the batter evenly into each muffin spot, filling only about 3/4 of the way. Want more berries on top? Go for it! Bake for 25-30 minutes, and check with a toothpick to see if they're done.

# Notes:

01 - Keep in the fridge for no more than 5 days.
02 - Fresh or frozen blueberries work fine—no need to defrost the frozen ones.
03 - Let them cool all the way before storing to keep them from getting soggy.
