Tasty Noodle Stir-Fry (Printable Version)

Fast, tasty stir-fried noodles loaded with chicken, cabbage, carrots, and a rich, savory sauce. Ready to enjoy in just about half an hour.

# Ingredients:

→ Sauce Mixture

01 - 1/4 cup (60 ml) chicken broth or water
02 - 1 tablespoon sesame oil
03 - 1 tablespoon hoisin sauce
04 - 1 teaspoon sugar (optional, if you'd like some sweetness)
05 - 1/4 cup (60 ml) soy sauce
06 - 1 tablespoon cornstarch
07 - 2 tablespoons oyster sauce

→ Main Components

08 - 1 cup (100 g) shredded carrots
09 - 2 tablespoons vegetable oil
10 - 8 oz (225 g) chow mein noodles (thin egg noodles work too)
11 - 2 green onions, sliced
12 - 1 small onion, sliced
13 - 2 cups (150 g) shredded cabbage or bok choy
14 - 2 garlic cloves, minced
15 - 1 lb (450 g) chicken breast or thighs, sliced thin
16 - 1/2 cup (50 g) bean sprouts (optional)

# Steps:

01 - In a small bowl, combine sesame oil, chicken broth, hoisin sauce, soy sauce, cornstarch, oyster sauce, and sugar. Stir until smooth and set this aside for later.
02 - Follow the cooking directions on your noodle package. Drain the water when done and leave the noodles to the side.
03 - Pour 1 tablespoon of vegetable oil into a large skillet or wok set to medium-high heat. Add the chicken slices and cook until they're browned and fully done, about 5–6 minutes. Take the chicken out and set it aside for now.
04 - Using the same skillet, heat the last tablespoon of vegetable oil. Toss in the garlic and onion, cooking for just a minute. Add in the cabbage, carrots, and any bean sprouts you're using. Stir everything around for 2–3 minutes, just until they're a little soft but not mushy.
05 - Add the cooked chicken back to the skillet, followed by the boiled noodles. Pour the sauce mixture on top and toss gently, making sure everything is coated and well-mixed.
06 - Sprinkle green onions on top and serve right away while it's hot!

# Notes:

01 - Marinate the chicken beforehand with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch for 15 minutes for more flavor.
02 - Switch the chicken for tofu, beef, or shrimp if you're in the mood for something different.
03 - For a bigger veggie mix, try adding mushrooms, snap peas, or bell peppers.
04 - Keep leftovers in the fridge for 2 days max. Reheat in the microwave or a pan to serve.
