Grab a medium bowl and toss in the chia seeds, milk, a pinch of salt, and vanilla extract. Stir until everything looks well blended.

Pop a lid on the bowl and stick it in the fridge. Leave it for at least 4 hours, but overnight works best. This helps the chia seeds thicken up like pudding.

When it’s time to serve, take the banana, peel it, and cut it into slices.

Split the chia pudding between two portions. Add banana slices on top, a spoonful of peanut butter to each, and drizzle some maple syrup if you like. Give it a quick mix before eating!
