Breakfast Loaded Totchos (Printable Version)

Turn tater tots into nacho-style breakfast with bacon, eggs, cheddar, and spring onions. Perfect for brunch with a twist.

01 - 6-8 eggs
02 - Salt and pepper to your liking
03 - 1 1/2-2 cups cheddar, shredded
04 - 6-8 bacon strips, cooked crisp and crumbled
05 - 1 lb tater tots, frozen
06 - Chopped green onions for a garnish

# Steps:

01 - Lay down a single layer of tots in a 12-inch skillet. Spread the rest evenly over the top, filling it in completely.
02 - Scatter the cheese and bacon over the tots evenly. Add salt and pepper if you'd like.
03 - If you can't see natural spaces, use a spoon to carve out 6-8 little wells, one for each egg. Crack and gently drop an egg into each space, trying to keep the yolks whole.
04 - Pop the skillet into the oven at 400°F and cook for 22 to 25 minutes, or until the egg whites are completely solid.
05 - Once out of the oven, let it cool down for 5 minutes. Toss on green onions, then slice and enjoy.
